Bikini Recipe

Makes enough for 10 servings

Ingredients for the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Syrup: Combine the listed components in a pan, bring to a gentle boil, stirring so the sugar melts. Then, turn off the heat and let it to cool fully. Pour to a sterilised bottle, cap it and store chilled, it will last for about four weeks.

Preparing the Cocktail Base: Mix all the spirits and syrup into one big jug, allow it to infuse for 60 minutes, then strain best through a fine cloth, so it's perfectly clear.

For serving: Measure 85ml from the cocktail base into your stirring glass containing ice, and stir lightly for about 60 seconds until cold. Strain to a cold coupe glass or equivalent, garnish with some cranberries and complete it by giving it a brief mist of mandarin oil over the drink.
